Vegan Alfredo
I made fettuccini alfredo for the first time in months, and lemme tell you it was DELISH! If you are vegan and craving something creamy, try this recipe.

INGREDIENTS:
- 1 package silken tofu
- 1 Tablespoon soy margarine
- 1/4 Cup Tofutti Sour Supreme (Sour Cream)
- 2 Tablespoons Tofutti Better Than Cream Cheese
- 1/4 Cup vegan parmesan cheese
- 1 teaspoon garlic powder
- salt and pepper to taste
- 1/2 Cup soymilk (+Additional for consistency)
METHOD:
Put all ingredients into a blender with 1/2 Cup soymilk.
Blend to a creamy sauce, adding additional soymilk to achieve desired consistency.
Heat gently until hot, but do not boil.
Serve over fettuccini.

I followed the recipe pretty faithfully, other than having to add another 1/2 cup soymilk since the only tofu I had in my fridge was extra firm, which didn't want to smooth down very much, and I used some garlic salt in addition to the garlic powder (for no other reason than it was in arm's reach).
